Abstract
This study aims to 1) Know and describe the implementation of current GMP on small and medium food industry of peyek chips and the like in the city of Padang, covering aspects of production, aspects of employees, facilities and infrastructure aspects, aspects of documentation, and quality control aspects, 2) analyze the level of implementation of GMP on small and medium food industry like crackers and peyek chips in the city of Padang. Research has been carried out during the three months from October to December 2013 in the city of Padang. In this research methodology, in answering the first research purposes, ie with a descriptive analysis to describe the results of the questionnaire results through the form of tables of measurement results of research variables. Meanwhile, to answer the second research purposes, in processing the data of the questionnaire author uses Guttman scale. To analyze the level of implementation of GMP on small and medium food industry of peyek chips and the like is also used the test of proportions.
The results showed that the application of GMP on small and medium food industry of peyek chips and the like in the city of Padang is still not optimally implemented. This is indicated by the small and medium industry are not fully implementing the existing GMP standard criteria for each aspect. Although the production aspects of the implementation of GMP standards already largely done, but for aspects of quality control, many standards in that aspect has not been implemented. While on the other three aspects, namely employees, aspects of infrastructure and documentation aspects there are mostly standard on each of these aspects are not yet implemented.
As for the level of implementation of GMP on small and medium food industry of peyek chips and the like in the city of Padang can be seen in each aspect, where for the production aspects of the small and medium food industry of peyek chips and the like in the city of Padang have implemented maximum. While the level of implementation of GMP in the aspect of employees, as well as facilities and infrastructure aspects of the small and medium food industry of peyek chips and the like in the city of Padang is not maximized implemented. Last, the level of the implementation of GMP on documentation aspects and quality control aspects in small and medium food industry of peyek chips and the like in the city of Padang less than the maximum implemented.
