Abstract
The modihcation tapioca starch has been carried by oxidizing out with NaHOCI 1.374 mg/ml. Its result in a changes of chemical composition and microscopic behavior such as shapes and granulasizes. The modification product of tapioca starch by oxidation is oxidized tapioca. The oxidation couses the decrease of starch, amylose and amvlope c-tin content. The microscopic test shows tbat the granule still possessed birefingence behavior, has a hole on hilum and a damage-oncentral granule. Th6 granule sizes become smaller and not uniforrn. This sizes are 10-23 u and -< 10 u with damage granule content are 12.50 - ?5.64 %.
