Abstract

Kapayang seed was used as preservative for fresh fihses. Kapayang seed were extracted following identified by using chemical reaction are, AgNO3 0.1 N, FeCl¬3 1%, K3FeCN6P 1% b/v, HCl 0.1 N, NaOH 0.1 N, KI 1% b/v. Kapayang seed and salt (1 : 1) showed the best combination action for preservative purpose. Protein content of the fresh fishes were significantly difference from the treated fishes. Keyword : Pangium edule Reinw.
