Abstract
ABSTRACT The influence of tyrosin, ascorbic acid, enzyrne activity (PPO) in potatoes lrave been determined by spectrophotometric method and theirs relation changes in colour of potatoes by using Murshell soil color chart methode. Two varieties were used in this experimed subsequently, Cipanas and Tambatang. Discoloration change that occured in two varieties is caused by enzyrnatic and non enzymatic reaction, but for Cipanas variety non enzymatic reaction the dominand role.
