Abstract

The research on preference of peopte to duck meat jerked had been conducted at Agam. The objective of this research was to investigate the preference through the organoleptic charateristic e.i. test, odor, texture and appearance. One hundred respondent have participated. The result showed that the people didn't like the taste of duck meat jerked which is not delicius. Beside that, its appearace was not interesting. On the other hand, the texture was stated tender and was not putrid test in odor.
