Abstract

A qualitative analysis has been done for nitrite and nitrate preservative which were used on sausage founded in some markets in Padang. The preservative in samples were extracted by mixing with water. Then, the result of the extraction were identified with colour reaction. Analysis of preservative in samples were compared with standard preservative substances were found. From three samples analyzed on sausage fast were found nitrite and nitrate number of protein, found in unpreserved meat protein contains more amino acids than. Keywords : Qualitative analysis.
