Abstract

A Pleminary study on separation of amylose and amylopectin from cassava starch using fractination methode with butanol – water (1 : 7) has been done. 3.3 gram (11%) amylose (hydro fraction) and 4.25 gram (14%) amylopectin (butanol fraction) were obtained from 30 gram cassava starch. Each fraction was evaluated for their physicochemical properties such as velocity of gelatination, iodine reaction, infrared spectrofotometer, water absorption and swelling time. Cassava starch, acid starch and soluble starch were used as refference. The evaluation showed that the amylose fraction (hydro fraction) had a lowest velocity of gelatination and swelling, high water adsorption in composision to amylopectin fraction (butanol fraction) and others. The iodine test of amylose fraction (hydro fraction) showed a blue color red color and for amylopectin fraction (butanol fraction), cassava starch, acid starch and soluble starch showed.
