Abstract
In traditional method especially in West Sumatera, gambir product is usually dried by using solar energy. The drying process depends strongly on such energy. However, the quality of the gambir product is low and relatively not hygienist. Therefore it is necessary to develop a drying system by applying low humidity air. No literacy is found to describe the drying process for gambir product by using the drying air with low humidity. Drying air is produced by a dehumidifier. It is circulated by fan to dry the gambir placed in cupboard. Result shows that time needed in drying gambir product was very short and its quality after drying with low humidity air is very high and no effect on decreasing gambir quality was found. The content of catechin in gambir can be produced up 99,8% that better than that of gambir based on national standard. Keywords: cupboard; catechin; gambir; dehumidifier; low humidity air
