Abstract
This study was carried out at the PT. Aneka Mitra Indoguna (AMI) and the Departement of Agricultural Technolory Faculty of Agriculture Andalas University with the objective to determine the efficiency of the non-oily friying, energy requrement and to carry out an economic analysis. The method of the research was technical evaluation method by considering the effect of functional and structural factor on the design . The results of the study showed that: (a) non-oily friying efficiency was 34.04% , (b) energy required for the friying was 4465.05 kj/hour and energy for evaporation from aried materials was 3869.21 kj/hour, (c) non-oily friying rate was 0.375 kj/hour with capacity af 9.5% kg/hour, (d) Power needed for rotating of the equipment : 51.84 watt, (e) BEP = 57.35 kg/year, NPV : Rp. 157,544. B/C ratio = 1.002 and IRR = 33.65% (f) The quality of peanut product was good enough
