Abstract

Food safety problem in developing countries like Indonesia become important to paid attention because impact that generated can making worse nutrient problem of health that we have faced now. One of them is existence of contamination of chemicals food product for example inappropriate government order in use of sintetis colourant. Research had been done about Identification and Determination the Content of Red Colour Agent in Balado Chip which Sold in Bukit tinggi. The research was a descriptive study. The research was done in Laboratory Center of Health Padang from March until July 2008. The identification and kind of red colour agent was done by paper chromatography method and the determination of red colour agent by spectrophotometry. The result showed that 8 from 20 samples analized was used colour agent over the level was made by the Indonesian Health Department. The result also show variation in quantity of colouring agent used in samples. From 4 samples that used colour agent, 2 samples used over the level was made by the Indonesian Health Department yhich is 191,3 ppm and 425,6 ppm while from l l samples that used Erythrosin colour agent, 6 samples used over the level was made by the Indonesian Health Department which is 105,8 ppm, 144,2 ppm, 163,5 ppm, 202 ppna 240,4 ppm dan 182,7 ppm. The result showed that 75% samples used synthetic colour agent and 25% natural colour agent. Kind of colour agent was Ponceau 4R and Erythrosin. From 75% samples used synthetic colour agent, 40% samples used over the level was made by the Indonesian Health Department and 35% is not.
