Abstract

Kapayang seed was used as preservative for fresh fishes. Kapayang seeds were extracted following identified by using chemical reaction are, AgNO3 0,1 N, FeCl3 1%, K3FeCN6 P 1% b/v, HCl 0,1 N, NaOH 0,1 N, KI 1% b/v. kapayang seed and salt (1:1) showed the best combination action for preservative purpose. Protein content of the fresh fishes were significantly difference from the treated fishes. Keyword : Pangium edule Reinw.
