Abstract

The purpose of the research was to know the main sub- stances of gambir (Uncaria gambir roxb) which are cate- chin and catechu tannic acid (tannin) that can be extract- ed by applying hydraulic press. The result indicates that 61,49% catechin is extractable from raw material and tannin. But the amount of catechin and tannin that can be found in grain gambir product were 53.07% and 84.88% respectively. The gambir processing shows the decreasing amount of catechin and increasing amount of tannin. In order to increase the amount of extractable catechin, the suggestion is to do pressing process direcfly after boiling the raw material or by integrating the boiling and press- ing process in one improved equipment.
